NO FAIL MAC N NOT CHEESE.

 

If you have followed The Cozy Vegan for awhile, you’ll note that I have a certain affinity for vegan mac n cheese! I have written many mac n not cheese recipes for you cutie pies in the past, but I think I have finally landed on a real winner! I’ve experimented with so many. Coconut milk vs. soy vs. almond milk….broth vs. nondairy milk….nutritional yeast vs Daiya….to roux or not to roux….

Somehow, I have kind of combined the best of all my favourite recipes to land on this on! It is a simple recipe, perhaps not unlike a traditional mac n cheese. As for the milk, I prefer soy or almond milk, and not coconut, just because the taste is a little much for this particular recipe. I use both nutritional yeast and Daiya, and will leave it up to you guys to adjust the seasonings to your tastes! There is no roux, though there is a little flour in here to thicken things up.  Hope you’ll enjoy! Let me know what you think ❤

Ingredients
1 pound pasta
1.5 cups unsweetened non dairy milk
1 tbsp earth balance
1/3 cup nutritional yeast
2 tbsp all purpose flour
1 tbsp lemon juice
2 tsp mustard
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste
2 cups Daiya shreds

Optional:
1/2 cup extra Daiya shreds
1.5 cups breadcrumbs
2 tbsp nutritional yeast
1 tsp your favourite dried herbs
pinch of salt
-Shake ingredients (except for daiya)together to sprinkle on top of finished product if you prefer a crust

Instructions: 
-In large pot, cook pasta as package specifies, and strain. Set aside back in pot.
– Heat soy milk and Earth Balance on medium heat. When Earth Balance has melted and steam is rising, add flour. Whisk until milk thickens (about 3-4 minutes).
-Turn heat to low, and add nutritional yeast, mustard, garlic powder, onion powder, lemon juice, and salt and pepper to taste. Whisk thoroughly.
-Keeping on low heat, add Daiya shreds. Stir with wooden spoon until cheese melts and you have a creamy sauce. At this point, taste, and add more seasoning if necessary.
-If you have any add ins to the mac n cheese such as broccoli, kale, etc, add them now. Then, pour cheese sauce into the pasta pot and stir until coated evenly.

Optional (for baked mac n cheese lovers)
-If you prefer a nice crust on your mac n not cheese, pour the pasta into a casserole dish.
-Sprinkle on extra Daiya.
-Cover with breadcrumb mixture, and a couple pats of earth balance randomly
-Broil on low until the breadcrumb mixture becomes golden.

This is my absolutely favourite Mac n Cheese, and I most enjoy it alongside a generous helping of kale caesar salad!
