Red Curry Mac n’ (not) Cheese

Cozy timessss! It’s winter! It’s -28 degrees Celsius outside! It’s time to hide inside, stare out the window at the snow, and eat comfort food. This evening I was craving vegan mac n’ cheese, but also contemplating ordering thai curry but then realized what a jerk move it would be to expect someone to bring me curry in a -35 windchill. So I did what any sensible person would do, and made curry mac n’ cheese. Best of both worlds, really. This recipe is wonderfully lazy which I love….

Ingredients: 
1lb your choice of pasta (I chose brown rice shells)
3 cups almond milk
2 tbsp coconut oil
1/4 cup flour (sub GF flour if needed)
1-2 tbsp red curry paste
1/2 cup nutritional yeast
1 tsp each garlic and onion powder
1 1/2 cup vegan *cheddar* shredz
1 cup panko bread crumbs
Optional: your choice of veggies. I added caramelized leeks and peas)

Instructions:
-Cook your pasta of choice according to the instructions on the frickin bag. OH WHAT? YOU THOUGHT I WAS GOING TO TELL YOU HOW TO COOK PASTA. NOPE. AIN’T NOBODY GOT TIME FOR THAT. Mine were brown rice shell pastas. They have a bunny on the bag. I really like them. Strain, then place back in its pot and set aside.
-Preheat oven to a broil.
-On medium high heat  in a separate saucepan, whisk together almond milk and coconut oil. When coconut oil has melted down, whisk in your curry paste, garlic and onion powder then your flour, and nutritional yeast. This mixture will quickly begin to thicken. When it starts to bubble, remove from heat, and add 1 cup of your *cheddar* shreds. Reserve the rest for topping.
– Add this mixture to the noodles, and mix until evenly coated. At this point, feel free to add whatever vegetables you’d like. I opted for leeks and peas, but you could probably go for whatever you wanted here.
-Place your mac n’ not cheese in a casserole dish, and top with panko crumbs and remaining *cheddar* shredzzzzzz.
-Broil until the shreds begin to melt, and the panko crumbs are kinda golden.
*Note: This recipe does have a little heat to it! I find that heat is cut really nicely with a sprinkling of basil leaves, but it’s totally your call ❤
