Broccoli Salad

WHY IS IT 30 DEGREES OUTSIDE?! I am seriously melting this week, and between the heat and all of the time I’ve spent baking, I am so ready to never turn on my oven again (until next week’s market of course). So at this point, any excuse to eat just salad for a meal is a good one. We have been eating a lot of kale salads and the like at our apartment, but also have this favourite broccoli salad that we often pick up at a particularly overpriced organic grocer that shall not be named. I always promise to make us a huge batch of it so that we don’t have to spend $6 on like two bites worth, but have never gotten around to it…

UNTIL NOW. With pretty basic staple ingredients that were already in our kitchen anyways (with maybe the exception of Veganaise…some sort of creamy ish is necessary for this creamy and refreshing dressing), I have come up with something pretty delicious that I will likely bring to barbecues and potlucks all summer long!

Ingredients:
1 head of broccoli, chopped
1 diced yellow bell pepper
1 cup coconut bacon
1 cup toasted walnuts
1/2 cup brussel sprouts, chopped finely
1/2 diced red onion
2 tbsp fresh chives

Dressing:
1/2 cup vegenaise
1 clove minced garlic
1 tbsp lemon juice
1 tsp agave nectar
1 tsp rice vinegar

Directions:
-If you haven’t already, toast your walnuts. You can do this by placing them on a sheet pan in an even layer, and baking for 8-10 minutes at 350 degrees fahrenheit, flipping at least once. Set aside to cool.
-Combine all salad ingredients in your favourite salad bowl.
-In a small bowl, whisk together your dressing ingredients until THEY ARE ONE.
-Add your dressing to the rest of the salad and mix until completely coated!
-ENJOY THE HECK OUT OF SOME SALAD (do you remember being in third grade and thinking it was badass to say HECK all the time?)

I know I said I didn’t feel like cooking, but I couldn’t resist throwing on some barbecued smoked tofu and some garlic bread with the sourdough I got at the farmer’s market last night to make this a complete meal! I also top everything with nutritional yeast and this salad was no exception. Some people like raisins in their broccoli salad but I can’t even pretend to like raaaaisins, so do what you wish ❤
