It has been an Arctic freeze over yonder in Alberta, and I have been continuing to stuff my face with comfort foods like there is no tomorrow. Root vegetables, breads, pastas, all the carbs, give them to me now please. Over the weekend, I was craving a vegan burger similar to one I have at one of my favourite vegetarian restaurants all the time. It combines many of my favourite things, such as yams, smoked tofu, and dill! Upon telling M. all about this burger of my dreams, I decided that I would make something similar for dinner on Saturday.
It was soooo cold outside, that we made the pilgrimage out only to the local Italian market where I was able to source most of our ingredients. Fresh buns, veggies, and a beautiful grainy polish mustard to top it off. Here is the recipe and the results!
1 large yam, peeled and cut into wedges
1 cup cashews, crushed (I used my food processor)
1 brick smoked tofu
1 clove roasted garlic
3 tbsp sunflower oil
1/4 cup fresh dill
1 tsp rosemary
1/2 cup sesame seeds
salt and pepper to taste
1. Preheat oven to 400 degrees Fahrenheit. Toss your yams in a tiny bit of oil, salt, and rosemary!
2. Roast yams for 30-35 minutes, or until tender. At the same time, wrap your garlic up with some olive oil and tinfoil and let this roast!
3. Meanwhile, crush up your cashews if you haven’t already.
4. When yams are roasted, mash them in a bowl with your oil, crushed cashews, crumbled tofu, garlic, dill, and salt and pepper.
5. Roll into 6 balls, then smush into patties. Roll the patties in sesame seeds.
6. When ready, place patties on parchment paper. Bake for 10-15 minutes more in the oven.
7. Since these patties are quite soft, we also choose to place a tiny bit of oil on a pan at medium heat, and brown them a little on each side once they’re out of the oven.
We served ours on fresh buns with fresh greens and herbs, garlic aoli, grainy mustard, and slices of crisp red onion, but they can be enjoyed however you’d like! While these aren’t necessarily the most “traditional” tasting veggie burgers, they combine a lot of my favourite ingredients and I much prefer them. M and I quite enjoyed these with some balsamic brussel sprouts and garlic dill mashed potatoes! Let me know what you think!
