Things-I-Forgot-About-In-The-Back-Of-My-Fridge-Thursday

I think I need to change my domain name to http://www.brokevegancooking.com, guys. Seriously, I am going to be honest and say that Vegan MoFo has gotten a little exhausting when all I want to do is live off of ramen noodles and coffee but I feel like I need to be posting pictures of colourful dishes and going grocery shopping every other day.

Today I came home and realized I had a few things in the back of the fridge that WEREN’T GETTING ANY YOUNGER. These things included onions, purple cabbage(seriously, don’t ask me how long that fucking cabbage has been there), orange bell pepper, parsley, roasted artichoke arts, sundried tomatoes in oil, slivered almonds, and other things. I cooked some rice n my rice cooker with a cube of veggie bouillon and some of my favourite herbs. Simultaneously in a frying pan, I sauteed onions and the rest of my veggies. I combined all this with the rice, a can of chickpeas rinsed and drained, and some leftover pesto. So here I am. And here is my dinner tonight and lunch tomorrow and probably a couple other meals.

Have any of you thrown together meals from the back of your fridge this week? Were they amazing or a disaster? Mine are usually a disaster but this wasn’t half bad.

  1. hey, it looks tasty. I had “leftover soup” on monday. Brown rice, soy sausage, who-knows-how-long-it-was-in-the-freezer-frozen-vegetables, a can of crushed tomatoes, random veggies and veggie stock. I thought it was going to be gross but it ended up being really good. Just finished it up today!

  2. Just found your blog, what great recipes you have! This is very me, I refuse to throw ANYTHING away, everything has a purpose/re-purpose! Just the other day I made a dish completley out of pantry ingredients and an eggplant and not only was it delicious, it was enough for dinner for me and my husband, and my lunch the two days after! Looking forward to reading more from you as I scroll through. Feel free to check out my blog any time, I write about living organically on a budget. I’ll be posting vegan recipes every now and then as well!
