Celebrating Fall With Pumpkin Pancakes!!!

The vibrant colours of crunchy leaves on the grown, pumpkin everything, things with owls on them, cool crisp sweater weather, are all favourite things of mine that I like about autumn. Today, I came across someone sharing a recipe for Pumpkin Pancakes from a couple years back, and after examining it decided to adapt and make my own recipe for my roommate and I! These pumpkins are rad because they require no oil or margarine in the batter so long as you have some pumpkin puree, and I didn’t need to put any sort of flax or “egg replacing” agent in them either! They turned out wonderful.

1 cup almond milk (or any non dairy variety)
1 cup water (in the future I will be using cold chai tea, though!)
1 tsp apple cider vinegar
1/2  cup organic pumpkin puree
2 tbsp agave nectar or maple syrup (some form of sweetener)
1 tsp vanilla extract
2.5 cups flour
2 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice or cloves

Instructions:
-In a measuring cup, combine almond milk  with apple cider vinegar and set aside to curdle for a moment, making vegan “buttermilk.”
-Then, combine your “buttermilk” in large bowl with water, pumpkin puree, sweetener, vanilla extract, cinnamon, nutmeg, and other spices!
-In smaller sized bowl, sift together your flour, baking powder and soda, and salt. Slowly add into wet ingredients and whisk
-Meanwhile, Heat up your pan on medium heat, and make sure it is lightly coated in oil of your choice
-I used a 1/2 cup measuring cup to scoop up my batter and pour into the pan. Cook until it starts to bubble around the edges then flip
-If you are waiting for everyone to eat, I recommend setting your oven to bake on the lowest possible setting, and storing your lovely pancakes in there until they are always done!
-Top with anything you’d like- earth balance, maple syrup, agave, chocolate, almond butter, jam, the possibilities are seriously endless!

I really hope you guys enjoy these and your first day of fall! I plan to have the least stressful Sunday possible, and crunch in some leaves in a pair of boots. ❤
