Rambles and Lemon Tahini Dressing

The crux of wanting to do what you love, is that sometimes you need to work too much in order to make ends meet. Sometimes you even like doing these things (which I do, I love my jobs), but it doesn’t necessarily prevent you from burning out and subsequently spending all weekend in bed feeling pretty crummy.

Which brings us to today. I have missed blogging so much, but I have been kept so busy between working, filling little orders here and there, and generally trying to maintain awesomeness, that I haven’t even really touched a computer for more than five minutes to check my emails and go. Hopefully one day all of this hard work will pay off, and I will be able to just be awesome, make vegan food, and love life. Until then, please trust that I love you guys and do want to share with you.

Lately, I have been relying on a lot of quick staple foods to get by. I am going to share with you, a recipe for my favourite creamy salad dressing, which I recently discovers makes a really bomb garlicky lemon pasta sauce as well. This makes enough for about one pound of pasta, or a couple salads:

Lemon Garlic Tahini Dressing:
1 lemon, juiced
3 tbsp tahini
2 tbsp olive oil
2 minced garlic cloves
1/4 cup water (more if too thick)
salt
pepper
optional herbs such as a fresh parsley, rosemary, etc

So, pulse all of the above ingredients in the blender, and that is basically it. It is a quick way to get protein and good fats, and you can serve it on basically anything. I love it on tofu scrambles, quinoa and veggies, salads, and pasta. Take a look at this pretty pasta dish I made last week with it:
c694ed38604e11e283e822000a1f8e5b_7Pretty much I just tossed some linguine with all of my favourite vegetables such as kale, artichokes, bell peppers, broccoli. I also added some tofurkey sundried tomtato sausage, basil, pine nuts, nutritional yeast, and the lemon tahini garlic dressing. I don’t often eat a lot of pasta, but this dish honestly took me only twenty minutes to make, and I think I will be nomming on it again in the near future.
